Matcha... het groene goud, echte slow tea.

De bakermat van Matcha ligt in China, rond het jaar 1000. Pas enkele eeuwen later kwam de Matcha naar Japan.

Deze Matcha, door ons verpakt in een rond blikje met binnendeksel, komt uit de Japanse gemeente Kirishima in de prefectuur Kagoshima. De gemiddelde temperatuur in deze regio is 18,8 graden met gemiddeld 2.265 mm regen per jaar.

De gebruikte thee-cultivar is Okumidori: minder adstringentie, meer umami en een groenere kleur. De theeblaadjes zijn in het voorjaar 4 weken langzaam in de schaduw gegroeid. De oogst was in mei.

Bereidingstips:
  • Usucha (dunne thee): 2g Matcha op 70ml 75°C water, schuimend opkloppen (W-patroon) naar voorkeur.
  • Koicha (dikke thee): 4g Matcha op 40ml 75°C water, goed roeren of kloppen (O-patroon).
  • Matcha Latte: Koicha aanvullen met 200ml schuimend opgeklopte warme melk. Eventueel bestrooien met een klein beetje Matcha.
Maar Matcha wordt ook gebruikt in smoothies, ijs, cakes en taarten, ... zoek maar eens naar Matcha-recepten op internet en leef je uit!
