Gele thee

Voor de productie van gele thee worden de theeblaadjes net als bij groene thee na het plukken snel verhit in wokvormige pannen. Door de thee na dit proces niet direct goed uit te spreiden en snel te laten afkoelen, maar 6-8 uren te laten â€œzwetenâ€, verkleuren de blaadjes tijdens een beperkte fermentatie van groen naar geel. Hierna worden de blaadjes eventueel nog gerold en uiteindelijk gedroogd.
